Mexican Casserole

Had some wonderful friends and their girls over last night for dinner.  My friend Alison brought the homemade guacamole, chips and salsa and I provided the Mexican Casserole.  Everything was delicious – even the kids liked it!  This is the recipe for the casserole – I make primarily casseroles in my home because there are less dishes to clean, it makes lots of food, and my family can enjoy leftovers.

Ingredients:

1 3/4 cups chicken stock (broth)
1 cup yellow corn meal
1/4 teaspoon salt

3 lbs. lean ground beef (or ground turkey)
3 bell peppers (any color combo you like)
1/3 rd of large white onion
1 8 pack of burrito sized flour tortillas (you will use 4)
1 can refried beans
2 packages of taco seasoning
1 can diced onion and garlic tomatoes
1 16 oz. package (4 cups) shredded sharp cheddar cheese

Ingredients (tupperware contains corn meal), picture does not contain cheese.

Directions:

Preheat over to 350 degrees. Take a lasagna dish and spray with non-stick.  Add two burrito tortillas to cover the bottom of the dish, set aside.  
Place large pan on burner over medium heat.  Pour in chicken broth and heat until you see bubbles start to form.  Add salt and cornmeal, then cook, stirring constantly, until mixture reaches consistency of mashed potatoes, 4 to 5 minutes.  If it’s too thick just add water.  Once at a mushy consistency use a non-stick spray-coated spatula to spread cornmeal mixture over flour tortillas in lasagna dish.  Once evenly distributed, open the refried beans and spread evenly across cornmeal mixture.

Lasagna dish is layered with flour tortilla, corn meal and refried beans.
Pan has 3 lbs. of ground beef with bell peppers and onions from the food processor.
You can use the same pan for the meat.  Use a food processor to mince the bell peppers and onion.  Add meat, bell peppers and onions to the pan on medium high heat, stirring often, until meat is cooked through, usually 5-7 minutes. Mix taco seasoning with water per directions and then add to meat and cook until most of the liquid is evaporated. Once cooked through turn off burner and use a slotted spoon to spoon 1/2 of meat mixture into the lasagna dish over the refried beans.  Then sprinkle 2 cups of shredded cheese on top, layer with 2 flour tortillas and then layer again with the remaining meat and cheese.  Add diced tomatoes on top, cover with foil and bake in the over for 30 minutes.  I usually  heat enchilada sauce and offer it on the side for those who like their mexican a little more spicy. Enjoy.
