Easy Recipe: Southern Pecan Pie

There is not as good as Southern Pecan Pie - this pie is moist but retains that nutty crunch and sweet Pecan Pie flavor. Now I'll admit, there is one tiny secret to a successful pecan pie. Want to know what it is? Fresh Pecans. You can find these at the farmer's market or the local supermarket.

Ingredients
  • 1 Pastry Pie Shell - get a deep dish variety (frozen is fine - defrost first for ½ hour)
  • ¾ cup Light OR Dark Corn Syrup
  • 3 eggs with yolks
  • 1¼ cups light brown sugar
  • ¼ teaspoon salt
  • ¾ stick of unsalted butter, melted
  • 2 teaspoons pure vanilla extract
  • 2 cups pecans - chopped or halved
  • ½ teaspoon shredded pumpkin (optional)
Instructions
  1. Preheat oven to 350°F. Place a baking sheet with a rim on the rack so it also gets preheated.
  2. Place the pie crust into the pie tin or pan. Pour pecans into pie crust.
  3. Melt the butter. Then, mix corn syrup, eggs, sugar, butter and vanilla into the melted butter using a spoon or silicone spatula. Add the 1 Tablespoon of shredded pumpkin if desired. Stir to combine thoroughly. Pour filling over pie crust with pecans.
  4. Wrap pie edges with foil to prevent over-browning, remove for last ten minutes of bake time. Bake on center rack of oven for 60 to 70 minutes. Cool for 2 hours on wire rack before serving.
