Mickey Mouse Birthday Party Cake

This post is based on the cake I just made for my now three-year-old.  Enjoy!

For this Mickey Mouse cake I used two 8″ rounds and one extra thick 10″ round. I also did two layers of icing.  I used royal icing (recipe below) to do the first coat and then I colored some white Duncan Hines icing with blue, green and yellow food coloring to lay on an extra thick layer of icing (it did a better job of covering up the imperfections of the cake).  I start with 10 drops of food coloring and then just add drops until the icing reaches my desired color. Photo: This has the 1st layer of frosting – you can see how it creates a “shell.” You may also notice the jagged edges of the cake. I had to take off the decor to re-frost the cake.

The nice thing about using royal icing as the first layer of color is that it pours onto the cake.  It creates a sort of shell over any cake imperfections.  I let that layer set-up overnight and then I was able to frost the cake with an additional layer and no crumbs go into the outer layer.  Neat trick right?

The stars and flowers are made out of candy melt and the decals of Mickey and friends are from the baking section at Walmart.  For the molds I used ice cube trays that looked like flowers (Dollar Store) and stars (Walmart).  If you use an ice cube try your candy melts may be a little thick.  If so, just melt the backs off in the double boiler after they have hardened.  I also recommend placing the candy in the fridge to harden – they come out nice and shiny when you refrigerate them. Photo: Make sure to use a double boiler if you cook candy melt. If you place candy melt in direct contact with a metal pan it will carmelize and turn brown.

Helpful Tips for this Mickey Mouse Clubhouse Birthday Cake

The clubhouse and shoe garage are four-color printables I downloaded from Disney Junior. Before you start a cake like this, a couple of key things to keep in mind:

  1. It’s very important to have all the ingredients at room temperature before you start.
  2. Combine elements as directed.  If you try to combine them all at once you’ll have a mess and not a cake. I think the most important step is whipping up the butter and then whipping in the sugar.   3. Make sure to thoroughly grease and dust flour onto the inside of the cake pans.  For greasing I always use unsalted room-temp butter.
  4. Plan to make your cake at least two days in advance so you have enough time to spend decorating the cake.

Mickey Mouse Cake Ingredients

Ingredients: (this mix is perfect for one 8″ round, to make a 10″ round you’ll need 1 & 1/2 times this mixture).  I used 3 1/2 batches of cake mix to make the cake pictured in this post. It could easily feed cake to 35-40 people.

  • 3 eggs
  • 1 1/2 tsp. vanilla extract
  • 1 1/2 cups cake flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 12 Tbs. (1 1/2 sticks) unsalted butter
  • 1 cup sugar
  • 1/3 cup milk

Have all ingredients at room temperature.

Preheat an oven to 350 degrees.  Grease and flour the walls of your cake pan.

In a small bowl, whisk together the eggs and vanilla until blended.  In another bowl, sift together the flour, baking powder and salt.  Set aside.  It is important to use three different bowls and combine ingredients as directed.

In the bowl of an electric mixer fitted with the flat beater, beat the butter on medium-high speed until light and creamy, about 3 minutes (I have a simple hand held mixer and it worked just as well). Gradually add the sugar and beat until light and fluffy, about 3 minutes.  Stop the mixer and scrape down the sides of the bowl.  Add the egg mixture and beat on medium speed until well combined, about 1 minute.

Reduce the speed to low and add the flour mixture in 3 additions, alternating with the milk and beginning and ending with the flour.  Beat each addition until just incorporated, stopping the mixer occasionally to scrape down the sides of the bowl; do not over mix.

Pour or spoon your batter in to the prepared cake pan, filling them to about  1/4 inch from the rim of the pan.  Gently tap the pan on the countertop to release andy air bubbles.  Using a small spatula, spread some of the batter up the sides of the wells.  This cake rises quite a bit you may need to use a bread knife to trim the cake after it bakes.  I also recommend placing a cookie sheet under the cake pan in the event any batter flows over the sides.

Bake until the cakes are golden brown on top and a toothpick inserted  into the center of each cake pan comes out clean, 35 to 45 minutes.  If you bake multiple cakes at the same time it could take longer.

Make sure it is throughly cooked, else your cake will flop in the middle. Transfer the pan to a wire rack and let cool for 15 minutes.  Using a serrated knife, level any part of the cake that rose above the rim of the pan.  Gently tap the pan on the countertop to loosen the cake.  Invert the pan onto the rack and lift off the pan.  I also recommend removing the cake from it’s pan while it is still warm.  If you wait it may be very hard to remove. Let the cake cool completely, then decorate as desired.  The recipes for the cake and icing are from Williams-Sanoma Kitchen. Meringue Powder is one ingredient you may not have on hand. You can pick it up at Michaels or Williams Sanoma.

Recipe for Royal Icing

  • 4 cups confectioners’ sugar
  • 6 Tbs. warm water, or as needed
  • 3 Tbs. meringue powder (you can find this at Michael’s)
  • 1 tsp. vanilla extract

In a large bowl using a handheld mixer, mix together all of the ingredients until smooth and thick, yet pourable. If necessary, add more warm water, 1 Tbs. at a time, to achieve the correct consistency. Makes enough icing for 1 color used on this cake.  You want it to be thick and pourable.   I made two batches for this cake, one batch I used to make the blue and the other I used to make the green icing. I’ve used both regular food coloring and gel coloring and both work great.

You want it thick and pourable. Remember- food coloring is liquid so you may need to add more powdered sugar once you color the frosting.

Store icing in bowls or jars with a piece of plastic touching and covering the entire surface of the icing to prevent it from forming a crust. The icing will keep for 3 to 4 days. Pictured below is the second layer of icing – Duncan Hines dyed the desired colors. The trim is ready-made cupcake icing.

I think the hardest thing about this cake was deciding how I would decorate it.  Once I made up my mind it was easy to do. I decided to make the bottom two layers green like grass and decorate with red flowers. The top two layers are blue like the sky and I decorated them with yellow stars.
